Abgoosht is one of the most traditional Iranian foods. It is also called Dizi, which refers to the traditional stone crock pots it is served in. Hundreds of years ago Abgoosht was made with lamb and chickpeas.

  1. Take 1 kg lamb meat
  2. Make ready 2 onions, peeled and chopped roughly
  3. Take 1 cup chickpeas, soaked over the night
  4. Get Charlotte potatoes
  5. Make ready 3 tbs tomato paste
  6. Get 1 tbs saffron water
  7. Prepare 1 tsp turmeric
  8. Prepare 1 tsp cinnamon
  9. Take 1 tbs dried lime powder
  10. Take Salt- pepper and oil

A while back my Maman sent me these beautiful Dizi stone pots. I finally used them for the very first time to cook delicious Aabgoosht over charcoal on my BBQ. But don't worry, if you don't have a garden, a BBQ or Dizi pots. You can prepare Aabgoosht in a regular pan on your stove.

Steps to make Aabgoosht (Dizi):
  1. Wash the meat. Cut it into chunks. Put a large pot on a medium heat, add 9-10 cups of water, bring it to boil. Add meat chunks and onions. Cover the pot with lid. Simmer until it is tender. Check out the pot and remove foam.
  2. Cook boil, chickpeas separately. Set it aside. Once meat is cooked, remove it to the tagine pot.
  3. Add cooked boiled chickpeas, tomato paste, oil, potatoes, all spices + 2 cups of water. Adjust seasoning. Cover tagine with lid and place it in the oven at 180 C for about 40 minutes.
  4. Let it cooking until reduce volume of liquid but not all of liquid. When it is cooked, remove pot from the oven. Empty content of ceramic pot in a plate. You will have 3 ways of serving this dish 🙂

"Abgoosht"(meaning broth), "Shoorba" (pottage), "Dizi," or "Piti" (in Azeri language) is a delicious and traditional Persian cuisine. Some have attributed Abgoosht to the old way of nomadism and animal husbandry of Iranians. There are a few different ways in which this dish is spelled: Ab-goosht, Abgoosht, or Abgousht. Some also refer to this dish as Dizi after the traditional dish in which it is made.
